Shrimp Ceviche (Estrella Style)
This recipe was given to me by my Ecuadorian co-worker Karyna, after about a months worth of hounding her for it. She dictated her mother, Ingrid's original recipe, which I then edited and made some minor changes in the name of flavor and nutrition. Here is our final product, it's a summertime favorite of mine. In the past I've added some sweet corn, mango and even substituted some calamari for shrimp to add some variety, depending on my mood.
NUTRITION: Onions are beneficial to your body as they have been shown to help clear waste from all the cells in your body. Onions are loaded with the flavonol Quercetin, which is an antioxidant that provides resistance of cell membranes against the destruction of free radicals.
I cook out of necessity; my wife and children depend on it. I love to cook, it's relaxing, most of the time. At home our family tries to adhere to what I call my "work diet". Part of my job is educating others on nutrition and diet. I find that if you lead by example and incorporate your own advice, people seem to listen a little better. So for me, my work hours continue when I'm home, except my audience is my wife and kids. We try to eat extremely healthy during the work week and let our guard down on weekends. It's nearly impossible to adhere to a strict diet on weekends, ie. weddings, dinner at friends houses, birthday parties, date night etc. You can not control the menu when you're not home, so why try. Most of the time, you end up gravitating to the healthy choices on the menu anyway just out of weekday habits. That being said, here are a compilation of ongoing recipes, lunch and dinner ideas, smoothies and shakes and of course healthy baby food recipes. Like our "work diet" I find that there isn't a need for 100% organic or anything for that matter. I try to follow the "dirty dozen" and "clean 15" rule of thumb. It also helps if your friends and family have free range/organic chickens, eggs, venison and vegetable gardens handy.
